Welcome to Everything but the Gluten! I am a baked good/carb loving celiac who was diagnosed in 2023 at age 27. So I know good pizza, bagels and cinnamon rolls (rip). Unfortunately, I also have severe celiac symptoms that when undiagnosed made living life very miserable! So I also know the delectable pizza and cookies are NOT worth the pain.
Whether you’ve been gluten free for 20 years or 20 days it can be overwhelming and stressful. This blog is a place where I’ll share what I’ve learned, and my experiences as a celiac. Whether it’s venting about sometimes having NO options or the stress of trying to determine whether something is safe to eat.
